There are so many fantasy and science fiction series out there, I don’t know how I can read all of the ones I want to read. So, I just make a list of the top ones, and make sure I focus on them.

I’m more into ‘social’ sci-fi, but one military sci-fi series I did love was Poor Man’s War by Elliot Kay. http://elliottkay.com/ It’s very well written, and I’m horribly picky. 🙂

By all means read the Foundation series. It’s classic. (I’d focus on the original three volumes — Foundation, Foundation and Empire, Second Foundation. Asimov later expanded the series in all directions, like a gradually diffusing ball of plasma, but the other associated books are secondary — aside from the positronic robot series, which is worth reading in its own right.)
I highly recommend the Vorkosigan saga. Bujold is the best author now writing SF, IMHO. Each book is pretty much independent, but I’d suggest starting with The Warrior’s Apprentice, which brings onstage the central character, Miles Naismith Vorkosigan. You could also begin chronologically (sort of) with Shards of Honor.
